back to basics: buttercream icing


Today we're going to talk about buttercream.  The funny thing is, a few years ago I sucked big time at making icing!  {Clara can attest to that...haha.}  But Jordyn is the absolute master of buttercream, and has been teaching me her tricks, so I thought I'd share them with all of you!

One of the things that scares people about buttercream is that there is no "perfect" recipe.  It's going to be different EVERY. SINGLE. TIME.  This is due to varying temperatures of butter, how much you pack your icing sugar how hot it is in your house, etc. etc.  Soooo for those of us with OCD tendencies (*cough cough...ME!) this can be a bit difficult to handle.

First we'll start with the basic recipe.  This is what Jordyn and I use as our starting point...and then go from there, tasting as we go, until we're satisfied!


Buttercream
Ingredients
1/2 cup Butter (or margarine) {MUST be at room temperature or you can very carefully warm up cold butter...but you don't want it to be liquidy at all!!}
3 cups Icing Sugar
1 tsp *Vanilla
2-5 TBSP Cream

*Feel free to substitute any other flavors instead of vanilla!  We often switch it out for coconut, almond, and sometimes caramel!

Directions
1)  Begin by beating your butter on medium-high until well mixed.
2)  Add icing sugar, vanilla, and a couple tablespoons of cream.
3)  Beat on medium until combined.
4) Here's the tricky part: use a spatula to test the consistency, and stick your finger a spoon in to do a taste test.  Adjust the taste and consistency by adding any of the above ingredients!


To be honest, we're not to fussy about using butter as opposed to margarine unless it's for something special.  Margarine's a lot cheaper, and so far none of our friends have complained!

Mix butter to ensure a smoother icing.  This is especially helpful if your butter is a bit too hard or soft!


Then, add in your icing sugar, vanilla and a bit of cream.


Adjust the taste and consistency to your liking, and you're done!


Jordyn and I have put together a few common problems that we've run into when making buttercream, and we hope it helps!

Problem: too runny
Causes: -your butter was too soft
              -your kitchen is too warm
              -you added too much cream
Solution(s): -add a bit more icing sugar
              -pop it in the fridge for a bit (*this is good for those times when you melt your butter too much or your kitchen's a bit warm.  otherwise your icing might start to taste like icing sugar if you add too much!)

Problem: too stiff
Causes: -butter was too cold/hard
              -too much icing sugar
              -not enough cream
Solution(s): -VERY CAREFULLY warm up the icing in the microwave.  watch it like a hawk, and stir often. it won't need more than a few seconds.
              -add a bit more cream

Problem: tastes like icing sugar
Causes: -adding too much icing sugar....hah!
              -butter was too soft...and therefore you added too much icing sugar
              -not enough vanilla or cream
Solution(s): -add a bit more butter
                    -add a bit of cream
                    -add a pinch more vanilla 


You might encounter the above problems individually, or as a combo!
Just remember, the more you practice, the better you'll get!

That means you should probably make more cupcakes...

We are so excited to introduce a new recipe series to you!  "Back to Basics" will be a series where we walk you through staple recipes and kitchen skills that we think would be useful to everyone.  I've had this idea in my head for MONTHS, and the original inspiration for it came while I was still at my old food blog (before p.s.heart even existed!), and I am so happy that it's finally happening.

"Back to Basics" will often be found before/after tasty tuesday posts, and will likely be linked within recipe posts for more in-depth tutorials for those newer to baking, and to hopefully keep future recipes from feeling redundant for those who know what they're doing!

weekly wrap-up: perfect summer days


Jordyn and I started off the week exactly right with a trip to a local dairy farm for icecream!


Birchwood Dairy Farm is a wonderful combo of a dairy farm, processing plant, and country store.  Not only do they sell fresh produce, but they also sell their own cheese, yogurt, sour cream, and our favorite....ice cream!  It's always a special treat to visit, and I'm in love with the endless cornfields in the surrounding area.


One of the most exciting things that happened this week is that Jordyn and I participated in a tea contest, where the winner receives $30 in tea!  The wonderful girl who hosted this contest is Karla (of Karla's Specialteas), and she makes all of her teas herself!   Keep an eye out this week for a recipe for Sangria Iced Tea that I got from her as well!


I also got together with my dear friend Jenna before she departs for Edmonton with her hubby this week.  I'm going to miss this girl so much!



And to backtrack a little bit....a couple of weeks ago, I FINALLY attended Vancouver's Celebration of Light fireworks this year!  It was so much fun to hang out with old friends at the beach, and to see the thousands of people that all came out to enjoy the fireworks! 


I realized how much I truly do miss Vancouver, and I'm so excited to be heading back in a couple of weeks!

(I was a total noob, and completely forgot a tripod....so unfortunately all my shots were handheld, and thus, not so spectacular!)


I hope you've all had a lovely week!  We're having a family day today....and are off to climb a mountain!

outfit of the day: a simple summer dress


We've been going through a "mini" heatwave....and I cannot wait until it's over!  This past week has made me wish that I had a job inside a nice air-conditioned office somewhere....but then again, where is the character building in that?

However, the oppressive heat and constant sticky, sweaty feeling is not exactly conducive to creating cute outfits.  So, this week's outfit is just a super simple summer dress.  It's my favorite way to beat the heat!


I found this pretty floral dress in a local Vancouver shop, and it was love at first sight.  Although it's a bit hard to see in the photos, the sweetheart neckline is actually formed by a bow at the bust.  It's such a subtle, lovely detail!

I paired it with simple black flats for a slightly dressier look, but I would also put on a pair of converse and a jean jacket for a slightly more casual look!


And on a slightly different note, I had to take all of these photos myself (since Jordyn wasn't around to help), and I just want to say kudos to all fashion bloggers who do self-portraits all the time....they're tough!

I hope that all of you are enjoying the last few week of Summer!  Although I'm sad that it's coming to an end, I'm so excited for Fall clothing...boots and scarves and sweaters!

diy: yarn picture frames


The inspiration for this DIY came from Michaels.com.  I saw this fun craft and decided to try it myself, but I couldn't find any full tutorials, so I decided to make one.

I volunteer with Big Brother and Big Sisters, so I am always looking for fun crafts to do with my "little sister".  We love taking pictures, and try and decorate a couple frames a year so we can preserve our memories together.  I think this craft will be perfect to do with her this year!


Materials: old picture frame/scissors/double sided tape/felt/beads/buttons/yarn/picture



I started out with lots of buttons and beads, though I only ended up using the buttons.  I liked the way they looked better, and I only had really bright coloured pony beads etc.  I thought the buttons were just a little bit cuter.



The process is fairly straightforward.

1.  Take out the glass and back of your picture frame.
2.  Measure and cut a piece of felt so that it will go all the way around your frame.  Draw an X where the middle of the frame will be.
3.  Cut on the lines of the X, and fold felt back.  Place double sided tape on the back of the frame, so when you wrap the felt around, it will stick. 
4.  After the X is finished, wrap the rest of the felt around.  I had to trim a bit around the corners, it got a bit bulky.
5.  Place more strips of double sided tape on the back of the frame, on the felt.  Starting at the back, secure the end of a piece of yarn onto the tape, wrap around as many times as you would like, and then secure again on the tape.
6.  String buttons and beads onto the yarn as well.
7.  When finished wrapping the yarn around the frame, place tape (I used duct tape) over the back of the frame to keep all the yarn ends from coming off.

You can get creative with your yarn and accessories, I decided to keep it simple and just wrap the yarn around without doing anything fancy.  But feel free to add other materials such as jute, or string. Braiding or twisting the yarn would also add texture to your frame.


Step 3. - fold the X of felt, and secure it on the double sided tape.


After having wrapped yarn around the frame, you may find that the back does not fit in properly anymore.  I just printed out the photo I chose to use on card stock, and cut it to fit.  The card stock held up just fine, but there is no glass to protect it.  


You may recognize this photo from one of our weekly wrap ups, it is Kelsey, our Auntie Tina and me, at our favourite thai restaurant.

This project was a bit more time consuming than I had anticipated, so give yourself lots of time!  It was fun to experiment with the buttons and beads, which sometimes worked, and sometimes didn't.  There are no rules when making a craft like this!  Do you what you think looks good.

tasty tuesday : lemon blueberry scones

There is nothing better than starting your morning with a delicious breakfast...and my idea of a delicious, hearty breakfast is eating an icing topped lemon blueberry scone. Really, whoever it was that first thought that breakfast should incorporate lots and lots of sugar (seriously, every good epic breakfast has sugar in the form of: syrup, whipped cream, or icing...) is exactly my kind of morning person. So, here it is: the perfect summer morning breakfast to go, a lemon blueberry scone topped with lemon icing! 
Here's where the original recipe originates from: my trusty healthy college cookbook! Of course, I had to "de-healthify" this recipe by adding icing... but it was totally worth the extra calories. 


{   i   n   g   r   e   d   i   e   n   t   s   } 

cooking spray                           2 tbsp cold butter in pea-size pieces
1 cup flour                                1 egg
3 tbsp sugar                              3 tbsp skim milk
1 1/2 tsp baking powder           1/2 cup blueberries
1/2 tsp salt
1 tsp lemon zest

1. Preheat the oven to 400 degrees. Coat a baking sheet with cooking spray
2. Combing the dry ingredients in a mixing bowl. Add the butter and blend with a fork until the mixture 
    forms rough crumbs (pictured below)
3. Beat together the milk & egg in a separate bowl (pictured below). Add the liquid mix to the dry mix 
    and mix thoroughly. Gently fold in the blueberries and stir well until the dough comes cleanly off the 
    sides of the bowl.
4. Flour a large, flat work surface. Knead the dough until it sticks together well.
5. Form the dough into 6 balls, or cut into triangular pieces that are approximately 1/2 inch thick.
6. Bake for 12 minutes or until lightly browned on top. Cool then drizzle icing on top!

1/2 cup butter
2 tbsp lemon juice
1/2 tsp vanilla extract
3 cups icing sugar

Beat all the ingredients thoroughly together and drizzle over scones! 


& enjoy! I think I'll go polish off another one now...yum.

weekly wrap up: weddings galore

So the last couple of weeks have been incredibly busy for me (Jordyn), but I am loving it!  Yesterday I went to my third wedding in three weeks.  



Remember Jenna and Travis who got married in July?  Yesterday Jenna was a bridesmaid for her good friend Jordan, who had also been one of her bridesmaids.


After working with Jordan at Jenna's wedding, she asked me to do her wedding video too.  I was so happy to have had the opportunity to work with these lovely people again.  Jordan looked stunning, and Eddie just as handsome.  They were a joy to work with!


Their wedding was at Camp Squeah, a camp up near Hope, where they had both been camp counselors.  Their wedding was adorable, very DIY and had an adorable rustic feel.  They put so much work into personalized crafts, and everything was beautiful!


They opted for cupcakes rather than a traditional cake, and presented them on these awesome tree trunk cake stands.


Last Friday I had the pleasure of videoing the wedding of another friend of mine.  The bride, Kirsten, is the sister of a good friend of mine.  I got to know her better when she picked berries at my farm a few years ago, and we have kept in touch ever since!  We like to chat about school, friends, the farm, and share opinions on one of our favourite television shows, "Avatar: The Last Airbender".


 Instead of the traditional clinking of the glasses, Kirsten and Curtis decided to have a "Kiss Jar" so when you wanted them to kiss, you had to pick a piece of paper out of the jar and complete the dare you received. 


Curtis proposed to Kirsten during a game of Scrabble, so they incorporated Scrabble tiles into the wedding decorations.  This was so cute and personal!  Each table number was written in Scrabble tiles as well.

I am so honoured to have had the opportunity to work with all these fantastic people this summer!  All of the brides have been so amazing, I count myself lucky to have had such positive experiences.
