tasty tuesday : zucchini pecan bars

I really love when I can eat baked goods and feel "healthy," so this zucchini pecan recipe is a perfect fix for me! And I know - adding cream cheese icing on top really doesn't help my case at all, but it adds sooo much and I could never say no to a cream cheese icing! So here it is, my misleadingly "healthy" zucchini pecan bar recipe with a delicious cream cheese icing :)
.  i n g r e d i e n t s  .

3 eggs                                              1 tsp salt
1 cup veggie oil                                 2 tsp cinnamon
1 1/2 cups white sugar                       1 tsp nutmeg
2 tsp vanilla                                       2 cups grated zucchini
2 1/3 cup flour
1/4 tsp baking powder
2 tsp baking soda

.  d i r e c t i o n s  .

1. preheat oven to 350 degrees and grease a 9x13" pan.
2, mix together first four ingredients in a large bowl. combine the rest of the ingredients in separate bowl - then combine them together and then add in the zucchini.
3. spread the batter evenly into the prepared pan.
4. bake for 20-25 mins, or until a toothpick comes out clean!
5. let cool before adding your cream cheese frosting
6. add some pecans on top and enjoy!

.  c r e a m   c h e e s e   i c i n g  .

1 (8 ounce) package of softened cream cheese
1/2 cup of butter
1 tsp vanilla
3 cups icing sugar

Cream together the ingredients and frost away! I tend to use only half the recipe for a 9x13" bar recipe and I'll freeze the rest for the future.

Changes!

Hey everyone!

So as you may have noticed the blog had an awesome face lift.  Buttons were added, fonts were changed, photos were photographed, and paintings were painted!!

However, while new things were added, some old things had to change as well.  While this past year has been fantastic, I have realized that full time blogging is not really my thing right now.  With my other commitments I was finding it hard to complete my blog posts, and I often ended up depending on Kelsey or Clara to fill in for me last minute.  This wasn't ideal for anybody, so after talking to the other ladies, I decided to step down from being a full time ps heart contributor.

But fear not!  The wonderful Kelsey and Clara have invited me to still participate in the blog.  I will mostly be teaming up with Kelsey to create fun and exciting Tasty Tuesday treats!  And I am sure Kelsey will wrangle me into participating in outfit posts and styled shoots, so I can promise you have not seen the last of me.

weekly wrap-up: happy father's day [and grad!]

Now I realized that I never actually shared any grad photos...so here they are!  We had a classic Vancouver Spring day, which meant RAIN. haha.  Although it did stop for a beautiful 20 minutes or so right after my ceremony, hallelujah!  However, my hair was still a victim of the humidity, and was a bit of a frizzy mess by the end of the day!

And there I am probably being a bit irreverent, but what's the use of a hood if you don't get to actually wear it!!! Right? Yeah.  There are several more photos of me pretending to be a Sith Lord....maybe.

Afterwards, we had dinner at the Boathouse, which is one of my favorite restaurants in Van!  So good.

I was so spoiled with lovely grad presents!  Above is my new record player (which is the same one as Clara's!  Twins! haha).  I am sooo in love with it, and can't wait to add to my record collection.

I also received the sweetest parcel from Clara!  It was packed full with so many wonderfully adorable goodies from Korea.  Man, I am so spoiled.

Since I haven't said this enough....I seriously want to steal Clara's handwriting.  It's incredible!  She has such a gift.

Since it's Father's Day, I thought that I definitely need to include a few photos of my dad and I!  I was totally a daddy's girl growing up, and our family jokes that I'm his little clone since we look (and act) so similarly!  I am so blessed to have such a wonderfully nerdy, adventurous, and hardworking dad.
Love you pops!

outfit post: mixing patterns

Kelsey picked this fun outfit for me today!  She matched a patterned top with patterned shoes, in a way that I probably wouldn't have thought to, but I loved the end result!

shirt: sirens // jeans: aeo // rue 21 etc

I love the contrast of the last two photos!  The black and white one is all serious, and the last one, well lets just say Kelsey mentioned an amusing Jimmy Fallon skit!!

check out our "about us" page! it's up and runnning! :)

I won't lie... this took me hours and hours upon hours, but I am completely ecstatic with how it looks! Finally, our "About Us" site is up to date along with a quirky little list of some of our favourite things.
The designs were painstakingly and lovingly all hand-drawn by yours truly, but despite the time it took, I had so much fun designing this page! I hope you enjoy this as much as I do :)

tasty tuesday: chocolate peanut butter chip cookies

Chocolate and peanut butter.  One of the very best combos in life!  Second in my books to salt and caramel...but only by a hair.

These cookies were my favorite as a kid, and baking them this week made me very nostalgic.
Coming home from school to a fresh batch of these was just the best.

The chocolate cookie dough base for these cookies is the same as our triple chocolate cookies, and is oh so fudgey and delicious!

Chocolate Peanut Butter Chip Cookies

Ingredients
1 cup softened Butter (or margarine)
1 cup White Sugar
3/4 cup packed Brown Sugar
2 Eggs
1 teaspoon Vanilla
2 teaspoons Baking Soda
1/2 teaspoon of Salt (only if you're using unsalted butter)
1 1/4 cups unsweetened Cocoa Powder
1 3/4 cups Flour
1 3/4 cups Peanut Butter Chips

Directions
1) In a large bowl, cream together margarine and sugars.
2) Add eggs and vanilla, and mix well until light and fluffy.
3) Mix in salt and baking soda.
4) Add in cocoa powder and mix (I like to add it before the flour, to try and reduce the puff of cocoa powder that sometimes goes everywhere!
5) Then mix in the flour.
6) Finally, stir in the peanut butter chips.
7) Place on cookie sheet in 1 1/2 inch balls. (squish down a bit for flatter cookies if you'd like.)
8) Bake at 350 degrees for 9-12 minutes.

Now you have a batch of deliciousness to share with friends!  Or you can hoard them...whatevs.  No judgement here.

My momma found me this vintage cocoa tin, and it just cracks me up!  If you look closely you can see mega nun-ception happening....and on the other side there are flamingos.  Why?  I have no clue....but it makes me smile every time I look at it.

I hope you enjoyed!  And remember to make these next time you're experiencing a major choco-peanut butter craving!
