new beginnings

Hello dear readers!
Kelsey here.  You may have noticed that it's been a bit quiet over here for the past couple of months, and we wanted to let you know why!

I've decided to move to my own blog, and it's called:  The Farmer's Daughter.  I would absolutely LOVE if you'd like to follow along over there with me!  Here are my new facebookbloglovin', and instagram pages.  I can't wait to start this new adventure, and hope you'll come along for the ride!


I have absolutely loved being a part of p.s.heart for the past couple of years, and have had so much fun learning and growing with Clara (and Jordyn).  All of our lives are in such different places right now, and I feel like it's time to move ahead and have my own blog again.

What will it look like?  Well, I'll mainly be going back to my roots and focusing mostly on food (my first love!), with the occasional outfit or photography post thrown in.
I'll also be archiving some of my favorite posts from p.s.heart over onto the new blog as well, and updating older recipes as well.



Clara will be keeping p.s.heart, and will be posting here and there as she has time.  (Keep an eye out for some gorgeous house updates!).  And you can always follow along with her photography website and facebook page!

b&w desert portraits.

Black and white portraits of the lovely Miss Kelsey back from our trip out to the desert terrain of Kamloops together. This girl is an absolute doll and I could take photos of her all day long - she's seriously a photographer's dream and I adore how these photos turned out - introspective, creative, a little moody, with a splash of drama, and all in all beautiful.

coconut mint blueberry cookies


I adore blueberries. They're definitely one of my favourite summer fruits and I've been buying and eating them by the crateful! These cookies were inspired by our blueberry coconut mojitos recipe, and I won't lie... I was extremely nervous about how these would turn out! I was craving blueberries and lemon and mint and coconut, but wanted them in pastry form... so I took a leap of faith and made these cookies and am sooo happy with how delicious these babies turned out! If you're a blueberry lover, I promise you can't go wrong with these.

2 1/2 cups all-purpose flour
2 teaspoons baking powder

pinch of salt
1/2 cup of sugar
1/2 cup of coconut oil
2 eggs
1/2 teaspoon lemon extract
1/2 cup coconut milk
1/3 cup coconut flakes
1 cup fresh (or frozen!) blueberries
1/4 cup of shredded mint leaves

Preheat your oven to 35 degrees. Sift together your dry ingredients while in a separate bowl, mix together your wet ingredients. Slowly mix both parts in together. Leave your blueberries for last and gently mix them in so that they don't explode and make a big mess! Then bake for 12-15 minutes.

*sidenote: not that it'll be a problem... but I recommend that you eat ALL of these the day you make them! I saved a half dozen of them and found that because of the milk and blueberries that the cookies got a little soggy the next day and weren't as scrumptious :) *

wanderlust: mexico city

Folding clothes, checking lists, zipping up suitcases, jumping in the car, waiting in lines, sharing mug shots, walking through security, finding the window seat, taking off, excited chatter, dozing off, poking at mysterious food, filling out customs, the turbulent landing, and then...

Bienvenido! 

I'm in Mexico City with 14 teenagers, 7 other leaders, and so many wonderful, loving, and welcoming locals who embraced us immediately and welcomed us into their lives and families. 
Here's a look into my two week adventure in Huixquilucan and Monte Sion, Mexico serving and being served alongside some incredible souls.
