outfit post : dainty lace peplum

 This outfit post is inspired by Valentines Day! I paired a dainty lace peplum top with a skinny belt, threw in a delicious raspberry macaroon cake, and topped it off with a flower crown.

.one foggy day.

I definitely have an obsession with fog.  It makes everything dreamy and eerie and magical.  

I watched from the window as this beautiful fog rolled in off the mountains, and then proceeded to drag Jordyn (truthfully she was just as stoked as I was) outside for this impromptu photoshoot.  We hope you enjoy it!

diy : vintage framed map art

I love to travel. It's something that I have been extremely blessed to have been able to do a lot of and a love that was passed down to me from my parents, who dragged my brother and I all over the world :) Thankfully, I'm married to a man who loves it just as much as I do! We dedicated our study to have a "travel" and "around the world" theme to it - to name a few, we have pieces from Haiti, Kenya, Ethiopia, Korea, France, and India decorating our walls and studying in this room just makes me restless to get up and go! 
For this diy, I thrifted some empty frames and a lovely old Canadian School Atlas from the 1940s and began to cut out maps of places that are near and dear to our heart. 
When cutting out your maps, simply be aware of the different sizes of your frames! This diy is so simple but adds such a great personal touch to your wall. 

The maps that I used for our wall include a map of... North America, Africa, Korea, the world and good old Alberta!
I also have to point out my wonderful vintage suitcases! The top one is from Caleb's grandpa and the one on the bottom was gifted to me from his parents, who know my love for vintage pieces. 
As I said, Caleb and I absolutely love to travel, so I thought I'd include a couple favourite places along with some bucket listers - 

{ 5 places I've fallen in love with }  -  trekking through the Himalayas in India (this is where my romance with caleb started!), being awed by the architecture of Antoni Gaudi in Spain, the lush green mountains of S.Korea, working at an orphanage in Haiti, and going on an adventure of a safari in Kenya.

{ 5 place I'd love to go to } - the summit of Mount Kilimanjaro in Tanzania, the canals of beautiful Venice,  the Inca site of Machu Picchu, Topkapi - the oldest and largest palace in the world in Istanbul, and the old city of Jerusalem.


If you could travel anywhere in the world, where would you go?

a little bit of shakespeare


Jordyn previously mentioned the wonderfully magical fog we had a couple weeks ago, and this is another photo that came out of that day.  I didn't add the pink in here...it was just the natural diffusion of colour that happened as the sun was setting!  So gorgeous.

tasty tuesday: valentine's day idea - vanilla cupcakes with raspberry whipped cream


Cupcakes, whipped cream and chocolate.  What more do you need?


Whatever your relationship status is this Valentine's Day, I can guarantee that these cupcakes will make your day better.  Pinky promise.
Vanilla Cupcakes


Ingredients:
1 cup Butter or Margarine (at room temperature)
2 cups Sugar
4 large Eggs (at room temperature)
2 3/4 cups Flour
1/2 tsp Salt
2 1/4 tsp Baking Powder
1 cup Milk
1 tsp Vanilla

1 1/2 cups self-rising flour
1 1/4 cups all-purpose flour
1 cup (2 sticks) unsalted butter, softened
2 cups sugar
4 large eggs, at room temperature
1 cup milk
1 teaspoon vanilla extract

Directions:
1)  In a medium bowl, cream the butter until it is smooth.
2)  Mix in the sugar until fluffy.
3)  Add in eggs, one at a time, beating well after each one.
4)  In a small bowl, mix together flour, salt and baking powder.
5)  Add in the dry ingredients, alternating with the milk and vanilla (about 3 parts each).  Beat after each addition just until ingredients are incorporated.
6)  Spoon batter into cupcake liners, filling about 3/4 full.
7)  Bake at 350 degrees for 20-25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean!

Raspberry Whipped Cream:

Ingredients:
2 cups Fresh or Frozen Raspberries
1/2 cup Sugar
3 cups Whipping Cream

Instructions:
1) Puree the raspberries in a blender (our Magic Bullet worked perfectly).
2) Place a metal sieve over a small bowl and transfer raspberries over to the sieve. Use a spatula to press the pulp through, until all that is left are the seeds.
3) Add sugar, mix well and set aside.
4) In a large bowl, whip cream until stiff peaks form. Fold in your raspberry puree with a spatula, and continue to fold until colour is consistent throughout.
5) Refrigerate until ready to use.



Sometimes I have a hard time reading and following directions.  See exhibit A above.  I totally just creamed my butter, sugar and eggs together all at once....and they were fine!  I do recommend beating the mixture for several minutes to make it extra fluffy!


While your cupcakes are baking, you can start making your chocolate decorations!  I melted down a few tablespoons of chocolate chips (you really don't need too many!), transferred them to a small ziplock bag, snipped the corner, and started piping!  You'll want to make your chocolate designs on wax or parchment paper, so they'll be easy to get off.

I played around with different heart designs, sizes, and some hugs and kisses.


You can also get your raspberry whipped cream ready at this time!  It's best to make sure to whip your cream really well, because when you fold in your raspberry puree, you don't want it to be too liquid-y!


Once your cupcakes are baked and completely cooled, you're good to assemble them!  Go crazy with your chocolate designs, sprinkles, or maybe just plain whipped cream.  Whatever suits your fancy.

Using whipped cream in lieu of icing is great if you (or your friends) aren't the biggest fans of icing, and is a nice change regardless.

Keep these cupcakes in the fridge (or even freezer) before serving!  Otherwise the whipped cream will start getting a bit droopy and sad.


For the 2 cupcakes below, I poked a small notch in each cupcake with a knife, and then inserted the bottom of each chocolate heart inside.  I loved the way it added even more dimension!


I also had a little bit of raspberry puree left over, and used it as a filling.  Please do this.  It adds an incredible pop of flavor, and is a wonderful surprise for unsuspecting friends!

weekly wrap-up: what makes you happy


This week has been a whirlwind of opportunities, tough decisions, and planning for the future.  I think it's finally starting to hit me that I'm graduating in just a few short months, and that I'll have to start dealing with real life!  It's a bit scary...

Anyways, here are a few things that made me happy this week:


1 - Jordyn made me the most delicious open faced strawberry, spinach, pesto, and mozzarella melt!  
It was heaven.
2 + 3 - we played Settlers.  it was a blast.
4 - a vintage tin for petit fours.  my mom bought this for me at an antique store last year, and I love it.
5 + 6 - kittens and more kittens.  'nuff said.

outfit post: I heart moccasins!


I <3 moccasins!  They're just so warm and comfy...it's like wearing slippers in public.  Except they're cuter.  And people don't give you funny looks...

Fact #1:  Jordyn bought these moccasin boots for me several years ago, and they've been one of my favorite presents to date.  The only downside is that I always have to wait for a sunny day to wear them since they don't do too well in the rain!

Fact #2:  As you can probably tell by my pink nose, it was absolutely freezing out!  So this session was cut quite short.  Yeah, I know what you're thinking, we're B.C. wimps.  But the wind was seriously insane!
