chocolate pecan caramel thumbprint cookies
Mmmhhh....caramel! You can't say that you're surprised that it's shown up again so soon. Ha!
We made these cookies for Christmas (yeah yeah...I'm working on the whole procrastinating thing), and they were a huge hit. Definitely a bit more work than your average cookie...but well worth it when you want something extra special.
These cookies have so many wonderful textures going on...from the crunch of the nuts, chewiness of the chocolate cookie, and finally the smooth creaminess of the caramel!
Chocolate Pecan Caramel Thumbprint Cookies
adapted from: taste of home
Yields: ~2.5 dozen
Ingredients:
1/2 cup butter, softened2/3 cup sugar
1 egg, separated
2 tablespoons milk
1 teaspoon vanilla extract
1 cup all-purpose flour
1/3 cup cocoa powder
1/4 teaspoon salt
1 cup finely chopped pecans (walnuts would be a great alternative!)
FILLING:
12 to 14 caramels
3 tablespoons heavy whipping cream

mocha cheesecake
I could have titled this post: "the only cheesecake I ever make", because that is the truth.
I've tried several other recipes for cheesecakes, but this one is my all-time favorite. Since cheesecake is a relatively expensive dessert that I tend to only make once in a while (for special occasions!), I really don't like experimenting too much. I just love this recipe too much!

Also, for those of you who aren't really coffee fans...fear not! I'm totally not a coffee drinker (at all), and I can't get enough of this cake. If you're still not sure, you can always leave out the instant coffee for an excellent chocolate cheesecake!

Mocha Cheesecake

Ingredients:
1/3 cup margarine, melted
1 1/3 cups graham cracker crumbs
1/3 cup sugar
3 tbsp cocoa powder

pumpkin squares with creamcheese icing
This recipe is seriously fail-proof. It is soooo good, perfect for fall, and so simple!
They're always a hit and although they always satisfy my pumpkin cravings...
they definitely keep me coming for more :)
Ingredients:
1 cup brown sugar
1 cup oil
2 cans (15 ounces each) of pumpkin puree
2 cups flour1 tsp baking soda
2 tsp baking powder
1 tsp salt
3 tsp cinnamon
pinch of nutmeg
pinch of cloves
Instructions:
Preheat oven to 350 degrees.
Mix first four ingredients in a medium sized bowl until light and fluffy.
Sift together the dry ingredients separately, then stir into wet mixture.
Spread batter into a 9x13 inch pan that is greased.
Bake for 30 minutes.
Cool before frosting!
Cream Cheese Frosting:
1 8 ounce package of cream cheese
1/2 cup of softened butter
1 tsp vanilla
3 cups of icing sugar
I promise, you won't regret making these! They're always a favourite and get gobbled up right away :)

tasty tuesday: pumpkin pie yogurt parfaits!
I am absolutely in love with fall. As a girl who grew up in southern Ontario, I seriously miss the beautiful changing colours of Ontario's countless maple trees. Fall to me meant long hours raking our big backyard with my little brother then jumping off our trampoline into mountainous piles of crunchy, colourful leaves. It also meant pumpkin season. Every year, my parents took us out to the pumpkin patch where we would get to pick a pumpkin (not everyone is as blessed to have grown up on a real farm *cough* kelsey *cough*... and no, I'm not jealous... not at alllll..). I'm getting side-tracked though, so to get to the point, fall = pretty leaves = pumpkins = best season ever.
Don't ask how that equation works, it just does. And yes, math is not my friend.
So here's a deliciously simple breakfast or snack for all you fellow pumpkin-loving fall people!
Seriously, it's awesome. Healthy, scrump-ta-la-lump-tious, and so so simple!
1 cup pumpkin puree
1 tsp cinnamon
pinch of nutmeg
2 tbsp maple syrup
1 cup greek yogurt
1 cup of your favourite granola
1 tbsp hemp
Instructions
1. Mix together the first four ingredients.
2. Start with a base layer of granola.
3. Layer in your greek yogurt and pumpkin mixture.
4. Finish it off with a dollop of greek yogurt and sprinkle more granola and hemp on top.
5. If using mason jars, make extras and stick them in your fridge for an easy breakfast-to-go!

tasty tuesday: blueberry vanilla bean ice cream
As soon as Jordyn and I found out that Clara was coming out to visit, we knew that we just had to make ice cream with her! We had been teasing her week after week with our raspberry, salted caramel, and chocolate covered cherry flavors, so we promised her that we would conjure up a magnificent flavor while she was here!
So we'd like to present you with....blueberry vanilla bean ice cream!
Gosh this ice cream just tastes like a dream. The smooth deliciousness of the vanilla bean complements the taste of blueberry perfectly, and little chunks of blueberry throughout add a wonderful burst of flavor!
Blueberry Vanilla Bean Ice Cream
Ingredients:
4 eggs
2 cups sugar
4 cups milk (we used 2% you could use 1% or skim, but it won't be as creamy)
5 cups whipping cream
4 vanilla beans (or 2 tsp of vanilla will work...but won't be quite as good!)
2 cups blueberries (approximately 1 cup of blueberries cooked down)
1/2 tsp salt
*Ice and coarse salt - this will be needed for the ice cream maker
Directions:
Cooked Blueberries:
In a medium saucepan cook blueberries on medium heat for approximately 20 minutes. Stir and mash with a fork as it's cooking. Let this mixture cool before adding to

*Feel free to puree and strain if you're looking for a chunk free ice cream!
Ice Cream:
1. Beat eggs in a large bowl.
2. Gradually incorporate sugar.
3. Add the rest of the ingredients (including cooked blueberries, but NOT ice or coarse salt) and mix well.
4. Place mixture in the barrel of your ice cream maker, and follow manufacturer's instructions. This will include layering ice and salt around the edges of the ice cream maker.
5. Now enjoy your delicious ice cream!
Bonus: Buy (or make) waffle cones. Dip them in chocolate. Fill them with ice cream!
