tasty tuesday: triple chocolate cookies

Warning: If you are on a diet, leave this blog post right now.... because if you don't, you will soon be off your diet, and probably stuffing your face with these delicious, fudgy, chocolatey cookies.


Can you honestly tell me that there is anything better than chocolate?


The answer is yes, and that thing would be two kinds of chocolate.


No wait, three kinds of chocolate.

But seriously, these cookies are one of the best things I have ever tasted, and one of the best recipes I could possibly share with you.  Triple Chocolate Cookies.  

I have found that there are two ways to make friends.  
One:  Be nice to people.
Two:  Give them these cookies.

When they are baking don't be surprised if your neighbours just "happen" to show up for a visit, out of the blue.  It isn't their fault, nobody can resist the siren call of these chocolatey delights.


This dough is unbelievably rich and chocolatey!  The secret is about 1 and 1/4 cup of cocoa powder.  It takes place of some of the flour that you would normally find in a cookie recipe.  The two different types of chocolate add texture, flavour, and a pleasing contrast to the eye that can't be beat!

 I like my cookies flat and chewy, so I usually squish the dough down a bit before I cook it.
Also, if they don't look like they are going to flatten out enough, about 2/3rds of the way through baking, I will squish them down with a metal flipper.  This gives the cookies a nice uniform flatness.

Triple Chocolate Cookies

Ingredients

  • 1 cup softened butter (or margarine)
  • 1 cup white sugar
  • 3/4 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 teaspoons baking soda
  • 1/2 teaspoon of salt
  • 1 1/4 cups unsweetened cocoa powder
  • 1 3/4 cups all-purpose flour
  • 1 cup white chocolate chips/chunks  (I usually cut up white chocolate wafers)
  • 1 cup semi-sweet chocolate chips

Directions

1.  In a large bowl, cream together margarine and sugars.
2.  Add eggs and vanilla, and mix well until light and fluffy.
3.  Mix in salt and baking soda.
4.  Add in cocoa powder and mix (I like to add it before the flour, to try and reduce the puff of cocoa powder that sometimes goes everywhere!
5. Then mix in the flour.
6.  Finally, stir in semi-sweet and white chocolate chips.
7.  Place on cookie sheet in 1 1/2 inch balls. (squish down a bit for flatter cookies.
8.  Bake at 350 degrees for 9-12 minutes.
9.  Try not to eat them all yourself.



 So please practice self control while around these little pieces of heaven, or you may find yourself with a severe tummy ache.
